Executive Sous Chef (Chinese Cuisine)

Responsibilities

  • Oversee daily operations and utilize production capacity to ensure food quality, consistency, safety and hygiene standards of all functions and activities

  • Supervise and lead all Senior Chefs and production kitchen activities to ensure the efficiency and smoothness of kitchen operation including but not limited to developed products, processes and SOPs comply with prescribed documentations and specifications

  • Support to develop new business as well as innovative and authentic menu designs to both airline and industry catering customers according to customer specifications to enhance customer satisfaction level

  • Manage and control on food cost variance by ensuring correct product and recipe usage

  • Responsible for all meal product presentations and meal evaluation tastings to internal and external customers

  • Other ad-hoc projects assigned by the management

Requirements

  • Minimum 15 years relevant experience in hotel and catering industry

  • Competent knowledge of different kinds of Chinese cuisine and large-scale food production and handling processes

  • Sound knowledge in authentic cooking methods for a wide variety of regional Asian and Western cuisine styles

  • International working experience in in-flight catering or food processing and manufacturing industry is preferred

  • Familiar with GMP, HACCP, ISO 9001, ISO 14001 quality management system

  • Strong sense in product, market and culinary development trends

  • Strong presentation skills and customer oriented

  • Proven managerial abilities in people management and leadership

  • Good communication, interpersonal, analyzing, organizing and planning skills

  • Proficient in Microsoft Office

  • Good command of both written and spoken Chinese and English
